As we reported last November, Aaron Barker’s successful Carnival Barker’s Ice Creams at the Truck Yard will open a second location in Oak Cliff (345 W. Jefferson) in mid-May. He is quadrupling his space. Currently he operates in 100 square feet, a reality I cannot imagine. Barker has been busy doing what he does best—pushing limits. The man who makes his own vanilla extract and tops ice cream with candied bacon is busy creating new flavors for both locations.

“I’m coming up with Pop Tart ice cream sandwiches and all kinds of cool stuff,” Barker says. “I’ve got a chef coming in to help me and we are in development right now.” Barker hopes the new place in Oak Cliff will be ready to go in mid-May. He’s also going to be serving bowls of chili, Frito pie, and a limited number of chili dogs (10 a day) made with Luscher’s Red Hots.
