Café Momentum Announces Kitchen Staff for Permanent Restaurant

Moments ago, Café Momentum director Chad Houser announced the names of the talent that will be in the kitchen when the current pop-up restaurant goes permanent. The good news: Houser has hired Eric Shelton as chef de cuisine and Justin Box as executive sous chef. The bad-ish news: Houser has yet to secure a lease for the permanent restaurant. Until that happens, the Café Momentum team will begin catering ASAP. I’d suggest you book your holiday parties fast as I am sure dates will fill up lickety-split.

Eric Shelton recent chef gigs include the M Dining at the State Fair Music Hall and Kitchen LTO. He also appeared Food Network’s Cut Throat Kitchen. Justin Box worked as a sous at Bolsa and Restaurant AVA. Add Houser to the mix, and you’ve got quite a formidable trio.

Houser also hired industry veteran Kenneth Pyron to run the dining room and the curriculum in the restaurant. Pyron was a GM at Lonesome Dove and Ovation in Fort Worth. He spent 13 years at Club Corp and was F&B director at Double Diamond Resorts. Pyron has been a volunteer service trainer at every pop-up Café Momentum dinner.
