Mudhen, a healthful, chef-driven restaurant will make its debut at the Dallas Farmers Market in Spring 2015. Restaurateur Shannon Wynne and partners Keith Schlabs and Larry Richardson, the threesome behind Meddlesome Moth, LARK on the Park, Bird Café, Rodeo Goat, Flying Saucer Draught Emporium (16 locations in the Southeast) and Flying Fish, are the old coots and rulers of this 5,500-square-foot roost.
Mudhen, named for the migratory bird which most people refer to as an American Coot, will have plenty of room for customers to spread their wings. The restaurant will have a patio space for al fresco drinking and dining. And a also will be a large beer garden. No, they are not growing beer. They will be serving craft beers from around the world. Wines and handcrafted cocktails also will complement the menu selections.
The kitchen will source most produce and meats from local farmers at the Dallas Farmers Market, but all rely on national vendors if local is not available. The menu will feature mostly fresh, seasonal dishes. “I am a lot more conscientious about what I eat these days,” Wynne says. “Just because a big-time chef makes something doesn’t mean I ought to be eating it. Our goal for Mudhen is to provide a healthful dining option that supports the spirit of the Dallas Farmers Market. This concept will offer accessibility for many who strive to eat a healthy diet, as the menu will be pretty affordable and offer a large selection of seasonal vegetables and meats.” The search for a chef is underway.
