Linda Gray Makes Moroccan Lentil Soup on D Living

Linda Gray, known for her role as Sue Ellen Ewing on the soap opera Dallas, graced D Living this morning with her recipe for Moroccan lentil soup. The recipe’s down below, if you’d like to try this at home:

(serves 5-6)

Olive oil
1 1/2 large onion cut into 1/8 inch dice
1 large carrot, minced
3/4 cup chopped parsley
3/4 cup chopped cilantro (plus extra for topping)
Himalayan salt
2 tsp. black pepper
6 large garlic cloves, minced
3 in. piece of fresh ginger, minced ( 3 Tbs.)
2 tsp. turmeric
2 tsp. cinnamon
2 cups dry red lentils
3 tsp. sweet Hungarian paprika
2 14 oz. cans diced tomatoes and their liquid (can puree before adding)
about 12 cups vegetable (or chicken) broth

1. Coat bottom of a soup pot with a thin film of oil over medium high heat. Add onion, carrot, parsley, cilantro, and a little salt. Saute for 8 minutes or until light brown. Reduce to medium-low, stir in the pepper, garlic, ginger, turmeric, and cinnamon. Cook no more than 60 seconds.

2. Blend in the lentils, paprika, tomatoes, and broth. Bring to a gentle bubble, partially cover and simmer 45 minutes or until lentils have dissolved and soup tastes rich and good.

3. Ladle soup into bowls. Sprinkle with cilantro and a squeeze of lemon.

I have made this wonderful dish about a dozen times since i saw her make it on the show. Lentils are a big part of my diet as they are a great protein source and so very nutritious. It’s also an amazing spicy soup to make during the wintertime, and so very yummy! I do crock mine for about 6-8 hrs on low, i also keep it cheap by using spring water with a teaspoon of vege-sal instead of broth. Tastes the same but is about $16 cheaper to make (when using organic ingredients) Big deal to me!

We all call it Sue Ellen’s Soup around my house, I take it to vegan potlucks and label it as so, People that remember are like, “Sue Elllen from TV?” ..yes!
I inform them that she’s back, beautiful, and vegan!

Last fall I took it to a vegan chili contest, labeled it as “moroccan red lentil chili” and won! Thank Linda! I’ll probably make it forever now and I’d love to see more shows with the spirited, wise, stunning, Linda Gray cooking! Thank you for sharing!
Ohio loves Dallas! ..i’m making sure of it!
    RIP Larry, you’re everywhere
