You Ask; We Provide. Chef Keith Cedotal’s Mango Smash Recipe

Last week we posted a First Take Restaurant Review of Malai Kitchen in Uptown’s West Village. After receiving numerous emails from mango-loving readers, I reached out to Malai Kitchen to see if they’d be willing to shoot us the recipe for the sticky Mango Smash dessert. Thank goodness Chef Keith Cedotal was happy to share.

Malai Kitchen’s Mango Smash

Sticky Rice Custard
4 cups coconut milk
2 cups sugar
1 teaspoon salt
2 ea pandan leaves

Bring all ingredients to a boil
Chill

Sticky Rice
2 cups glutinous Rice
4 cups water

Soak 8 hours, drain, steam in bamboo basket for 15 to 20 minutes over low heat.

Rice Crispy Treat
1 bag marshmallows
¼ cup butter
1 T chili flakes
8 cups rice cereal

Melt marshmallows and butter. Add chili flakes and rice until coated. Spray sheet tray and spread mixture evenly.

Make a sticky rice “pattie,” lay the rice crispy treat on top, and add the fresh chopped ripe mango. Pour the custard in the bottom of the bowl. Smash it all together and enjoy!
