Foodways Texas, a recently founded coalition of chefs, restaurateurs, food writers, farmers, cattle ranchers, historians, microbrewers, and scholars who are passionate about Texas’ culinary history, will be throwing a Gulf Coast Gathering fundraiser featuring dishes from award-winning chef Tim Byres, live music, an oyster shucking contest, documentary screening, and a short oyster primer by Walsh, author of Sex, Death and Oysters, at Smoke restaurant in Dallas. (The event is the fundraising lead-up for Texas Foodways first statewide symposium, dedicated to the edible heritage of the Gulf Coast, slated for February.)
