New Chef, Cesar Gallegos, at Bolla in Dallas

David Bull has split the scene at Bolla Restaurant in the Stoneleigh Hotel and has returned to Austin where he will open two restaurants in The Austonian. Bull is still an employee of La Cosha Hospitality, the group that manages the Stoneleigh. Anywhoo, Bull’s replacement is Cesar Gallegos, who is rejoining La Corsha—he worked at the Driskill Hotel and Barton Creek Resort in Austin—will take over the post of executive chef. October 2010 (Dallas, Texas) – The Stoneleigh Hotel & Spa and La Corsha Hospitality Group are pleased to announce the appointment of Cesar Gallegos to the position of Executive Chef. Chef Gallegos will oversee the Stoneleigh’s culinary efforts, including Bolla, Bolla Bar and the spectacular 11th floor Penthouse. La Corsha Chef/Partner David Bull will return to Austin to open two new restaurants located on the ground floor of the new downtown high-rise, The Austonian. Congress, a fine dining restaurant, and Second, a casual bistro, are the newest additions to La Corsha Restaurant Partners, and are expected to open before the New Year.

Chef Gallegos has many years of experience working in luxury and historic hotel properties throughout Texas, such as the Driskill Hotel and Barton Creek Resort & Spa in Austin, and the St. Anthony Hotel in San Antonio. With a degree in Culinary Arts and Food and Beverage Management from Texas Culinary Academy in Austin, he brings a wealth of cooking experience and knowledge to his new position at The Stoneleigh Hotel & Spa.
