Victory Tavern Ridge Vineyards Winemaker Dinner Menu
Experience Ridge’s High Quality Award-Winning Wines
Paired with an Unforgettable Four Course Dinner
[ED NOTE: Mr. Draper’s recently injured his hip and Dan Buckler will take his place at the dinner.]
It doesn’t get much better than Ridge. Winemaker Paul Draper has been with Ridge since 1969 and is known as one of the “founding fathers” of California winemaking. He is known for his crafting of fine cabernets and chardonnays from Ridge’s premiere Monte Bello estate vineyards, and as a pioneer in the production of long-lived, complex zinfandels. Paul was recently presented with the James Beard Award for winemaking. And if you’ve heard of the 1976 Judgment of Paris, you know Ridge Vineyards was one of the wineries that beat out the French in a blind tasting of cabernet sauvignons that put California on the global wine map.
Victory Tavern City Grille has a hip, urban atmosphere and a lively menu of seasonally inspired dishes reflective of Chef Jim Oetting’s experience and sense of quality ingredients. The very reasonably priced offerings are unique to Victory Park, without compromising polished and friendly service.

PAPPAS BROS. STEAKHOUSE SCOTCH DINNER
Produced in Speyside in the Scottish Highlands, the exceptional quality of The Balvenie Single Malt stems from its commitment to retain and nurture a high level of craftsmanship that other malt whisky producers no longer employ. Today the Balvenie Distillery produces a multi award-winning range of The Balvenie Single Malts, including The Balvenie DoubleWood 12 Year Old, The Balvenie Single Barrel 15 Year Old, The Balvenie PortWood 21 Year Old, The Balvenie Thirty and The Balvenie Cask 191 50 Year Old.  A rare, limited edition Vintage Cask, which is over 30 years old, is also bottled each year.  For further information visit www.thebalvenie.com

Andrew Wier, The Balvenie Ambassador, will join Pappas Bros. at this dinner. Weir’s screen debut came at the age of 13, playing the Young Hamish in Mel Gibson’s Braveheart.  After founding United Casting, one of Scotland’s leading agency for extras and background artists, Andrew went on to form one half of 3rd Degree Burns (with fellow Braveheart actor John Murtagh). Andrew then moved to New York in early 2005 serving as PR representative and US-wide Media Ambassador for VisitBritain. Today he works for William Grant & Sons as the west coast ambassador for The Balvenie Single Malt Scotch Whisky and is currently appearing as Robert Burns in a promotion for Homecoming 2009 on Scotland.org.

Andrew, along with Pappas Bros. Master Sommelier, Barb Werley, will guide each guest through the four courses. Each variant, perfectly paired by Executive Chef James Johnson, will have a unique taste but will still maintain the recognizable undertones of the distinctively rich, smooth and honeyed character of The Balvenie.
