Well I am having severe technical difficulties today. Either Mercury went into retrograde early or I drank too much biodynamic wine last night. I was writing a post about Coast Global Seafood, a new concept from RG2 restaurant group and I posted the press release. Then I accidentally published it, then I deleted it. Now I’m tired of the whole mess and I’m just gonna post the release below. Only because I like Paul Draper. On to Coast Global Seafood. (That name doesn’t make me hungry.)
The 8,000 sf dining room, designed by Paul Draper, is an elegantly casual destination restaurant awash in colors of vivid blues and linen whites. Custom artwork and light fixtures wittily play up to the Coast concept of jet-fresh seafood prepared in a chef-driven kitchen. Upscale resort-style patio furniture lends comfortable seating to diners overlooking the spectacular Bellagio-inspired fountain which serves as the centerpiece of the entertainment district’s newest expansion north of Legacy Drive. A private dining room for up to fifty guests satisfies the huge demands for corporate and social events in the area. Michael Cox, RG2’s Vice President of Restaurant Operations, was tapped to oversee the operation of the concept and orchestrate the service and experiential elements that set Coast apart from other seafood restaurants. His prolific background as a principle in Star Canyon, AquaKnox, and Taqueria Canonita provides RG2 with vast experience in upscale, cosmopolitan restaurants. Cox also oversees operations at the nearby Nicola’s Ristorante Italiano, an authentic Italian concept which has garnered critical praise as well as a legion of devotees since it opened in 2004. “The Shops at Legacy is an incredible location for restaurants,” states Richard Gussoni, owner and chief executive officer of RG2. “With Paul Draper’s design, Michael Cox’s expertise, general manager Charles Leon’s operations background, and Chef Brian Annapolen’s world-class cuisine, I look forward to the wildly successful opening of Coast Global Seafood and its continued popularity for many years to come.”
