You know who makes good cheese? People in Wisconsin. I’m pretty familiar with it, because my roommate in NYC came from Muscoda, and her parents own a dairy. They would send us boxes of cheddar almost every month, and we ate most of it, because we had no money. Also because the cheese was so delicious.
On July 30, Abacus restaurant is hosting a Wisconsin Cheese and Wine Dinner. Master cheesemaker Sid Cook and Deerfield Ranch Winery owner Robert Rex are bringing their wares to the restaurant, and chef Kent Rathbun is crafting a four-course dinner that incorporates the cheeses and pairs with the wines. Think cheddar and Shiner Bock beer soup and grilled veal filet with Gran Canaria scalloped potatoes.
