Romas, vine tomatoes, red teardrops, and golden teardrops are roasted with whole garlic and shallots.

4. Pan jus
The pan sauces from the pork braise and the roasted tomatoes are reduced and strained with a few secret ingredients.

5. Eden Creek Farms of Texas greens
The greens are flash-fried with a bit of olive oil and kosher salt.
