Oak‘s Alaskan halibut, white asparagus, fava bean & red pepper, $32

What is white asparagus, and what makes it so fancy? It’s grown in complete sun deprivation. This process of etiolation prevents it from turning green, which gives it a more delicate flavor. That being said, asparagus ranks among the top fruits and vegetables for antioxidants andin slowing the process of aging. Grab an extra helping and take in the sweet flavors of Alaskan halibut, which boasts a gentler taste than the Atlantic-caught family. This lean fish is a good source of high-quality protein and packed with nutrients.
