My favorite food happens to be a fungus with a variety of regal nicknames: “black diamonds,” “the crown jewel of French cuisine,” “diamonds of the kitchen,” or as it’s simply known—truffles. The luxury food item is so sought after that it has developed a rather unfortunate shadow industry full of deception, theft, and even violence worthy of a hollywood summer blockbuster. Why are people willing to go to such lengths for a mushroom? To smell and taste one is to know why, and tonight at FT33, Matt McCalister and friends will present an entirely truffle-themed menu with the rare item sprinkled throughout five courses. This particular dinner will feature black truffles which are here courtesy of Australia’s Truffle and Wine Company, and although I prefer white truffles, I don’t think I’d complain were I to receive a last-minute invite to this.
