A little birdie just told me Central Market has the exclusive on Jambon de Bayonne which will be flown to the stores from a small growing region in southwest France. They will be only the second retailer in the U.S. to carry it.  Like Jamón Ibérico ? You’ll love this salt-cured pig.

It’s a delicacy in France where it has been produced for 1,000 years. It is aged in the city of Bayonne for 12 months. Three months in four different chambers of the pig so the juicy pink meat reflects the climate of each season.  Jambon de Bayonne should arrive at all Central Market stores by the end of the week.
