Downtown Plano is blowing up. It’s the hottest place to be, which is why Cajun Tailgators (a food truck you can find on George’s schedule every week) is settling down into its first brick ‘n’ mortar space at 1112 E. 15th Street. Opening next month, Cajun Tailgators (the restaurant) will, according to the sign, “let the good times roll.”

Larger-picture-wise, Cajun Tailgators is the one of several food trucks opting to find a more permanent home. Nammi, the Vietnamese-fusion banh mi truck, opened inside Valley View Mall a few months back. The team behind Green House Truck is also opening Green House Market inside NorthPark Mall within the next month or so.
