Word comes through my email inbox that Chef Jason Boso is closing down the Cowboy Chow in Roanoke for a few days in September while they renovate the inside for a brand spankin’ new concept, Tacos & Avocados. Boso plans to have the new taco joint open by September, which means the makeover should be a quickie. Are tacos still taking over world? It sure looks like this trend is never-ending when a taco concept is replacing another taco concept…

Chef Jason Boso, best known for his thriving Twisted Root Burger Company, has announced plans to open a new concept called Tacos & Avocados. The fast, casual taco restaurant will feature quality ingredients in a down scale setting, with a focus on traditional and some not so traditional Mexican flavors. The space will also include a full bar with eight tequila-infused frozen margaritas, such as ginger-peach and watermelon-mint. The concept will also feature a self-serve and honor system paleta cart in the middle of the restaurant. Just slide a dollar into the coffee can and take any flavor you like.
Sample dishes include:
· Multiple variations of personal sized smashed avocados dishes, i.e. Fresh jalapeno and Tomatillo smashed avocado with Pepitas on top
· Off the cob Elotes
· Rib-eye steak taco with Bacon-onion marmalade, blue cheese crumbles and potato straws
· Mango chili pepper Paleta along with more traditional fresh fruit popsicles like coconut, watermelon and grape
In addition, Chef Jason has scored a deal with a local fishmonger to have the latest fresh fish trimmings sent to the restaurant for a weekly fresh fish taco. They never know what they will get so every day is a surprise…Mahi one day, Salmon, Snapper or other fish the next.
Tacos & Avocados will replace Cowboy Chow in Roanoke. The space is receiving a $50,000 renovation, with the newly-designed interior and branding by Brian Gibb which will feature art work from his Deep Ellum art gallery, The Public Trust. The restaurant’s collection is highlighted by commissioned works from the Dallas based art collective Sour Grapes and Favio Moreno.
Chef Jason Boso likes to refer to himself as the “everyman’s chef”. “I enjoy transforming fine dining kitchen skills into a establishment that everyone can appreciate,” said Boso. “ In case you hadn’t noticed, I love creating a fun environment that’s better than the restaurant next door while maintaining an affordable priced product.”
