Our first Winemaker’s Dinner since last October is slated for this coming Thursday, Jan 22nd.  We have chosen four very special wines and have created a menu to showcase each wine, and to give you some amazing flavors and palate memories!  Here’s the menu:
WINTER WINEMAKER’S DINNER
First Course:
Steamed, shelled Green-lipped Mussels on Tabouleh
White wine•butter•cream•herb sauce
LightCatcher *Barrel Reserve* Chardonnay
Second Course:
Braised Spiced Lamb Choplettes
Caramelized Onions•Almonds•Bittersweet Chocolate
LightCatcher Dry Orange Muscat
***We have less than a case of this wine left.
It will be offered at deep discount this evening only for take home purchases.
Main Course:
Beef Tenderloin topped with Lump Crabmeat
Spiced Raspberry Butter Sauce
Potatoes Anna
LightCatcher Reserve Merlot
Dessert:
Chocolate Keneffa
(a custard, raspberry & chocolate buttered filo pastry)
LightCatcher Knotport

It has been so much fun, as we’ve been test cooking each of these dishes, to see eyes pop open wide and exclamations of “oh, my…..” as we try them out.  The pairing of the gold-medal-winning-extremely limited supply Orange Muscat with the braised, spiced lamb and caramelized onions and almonds and bittersweet chocolate is especially amazing – who would’a thunk these flavors would go together!?  All together in your mouth they made a really happy dance.

So, the price is $85 per person plus tax and tip, and this includes all food and wine, as well as Caris’ between course explanations and anecdotes about the food and wine – a feature that has come to be a favorite part of these dinners for many.  How often does the Chef and Winemaker give you that kind of attention?  Not much.  But here, we do, and we take great pleasure in it.
One seating at 7 pm.
Call us at 817-237-2626 to reserve.

DR DELPHINIUM PROVIDES ADVICE ON CHOOSING AND CARING FOR VALENTINE’S DAY ROSES AND FLORAL ARRANGEMENTS
According to the Society of American Florists, more than 26 percent of adults in the United States will buy flowers for their loved ones this Valentine’s Day.

“We expect Valentine’s Day to be extremely busy this year with the Saturday timing,” said Dr Delphinium Designs & Events owner Charles Ingrum. “Last year, nearly 214 million roses were grown for Valentine’s Day.,Proper care will keep your Valentine’s flowers looking beautiful for days.”

· Remove any leaves that will be under water, taking care not to cut through or scrape the green bark.
· Cut stems by removing 1-2 inches with a sharp knife.
· Immediately after cutting, place flowers in a clean, deep vase of water containing a flower food provided by your florist.
· Check the flower food solution daily and make sure to keep it full, clean, and fresh. If the solution becomes cloudy, replace it entirely.
· Keep your flowers in a cool place, out of direct sun and drafts.

When creating this year’s Valentine’s arrangements, floral specialist Bryna Morrow chose from seasonal floral and greenery, along with the fine flowers and greenery not often used by traditional floral shops.

Dr Delphinium’s design team created eleven new arrangements especially for Valentine’s Day, named after classic desserts and liquors.

Pictured at left is Dr Delphinium’s “Tiramisu.” Elegant in its simplicity, the “Tiramisu” stands out in a tall violet vase with a collection of creamy white hydrangea, hot pink roses, vibrant green song of India, luscious magnolia leaves and reaching white dendrobium orchid stems.

“It’s wonderful because our buyer searches out unique things as well as staples,” Morrow said. “Our arrangements are designed with elements of roses, Holland tulips, gerbera daisies and snapdragons as well as rich mokara orchids, crimson ginger, lilly grass and calypso, finished with green and blushing lady apples, tall red dogwood branches, plum-colored tropical ti leaves and lemon leaf.” On some arrangements the dramatic effect is completed by clear vases highlighted by design elements like red crystals and black river rock.

Dr Delphinium’s design team created eleven new arrangements especially for Valentine’s Day, named after classic desserts and liquors.

“Amaretto” is Dr Delphinium’s version of a Valentine’s Day classic. This stunning rose arrangement features elegant long stemmed roses of your choice, lemon leaf, and tropical foliage with red crystals in the bottom of a tall glass vase. All 11 arrangements can be viewed at www.Dr.Delphinium.com.

Flowers: How to Extend Their Beauty

A little extra care can make a big difference for any size flower arrangement or fresh flower bouquet.

Most floral arrangements last 4-7 days or longer, depending on the flowers used and the care they receive.
The Society of American Florists provides these tips for longer-lasting, more vibrant flowers:

For floral arrangements:

– Keep the vase filled (or floral foam soaked) with water containing a flower food provided by your florist. Flower foods make flowers last longer but it is important to follow the mixing directions on the flower food packet. Most packets are to be mixed with either a pint or a quart of water. Flower foods should not be diluted with more water than is specified on the packet.

– If the flower food solution becomes cloudy, replace it entirely with properly mixed flower food solution. If possible, re-cut stems by removing one to two inches with a sharp knife. Be sure to use a sharp knife or clippers that will not crush the stems. Immediately place the stems into solution.

– Keep flowers in a cool spot (65 to 72 degrees Fahrenheit), away from direct sunlight, heating or cooling vents, directly under ceiling fans, or on top of televisions or radiators. (Appliances like televisions give off heat, which causes flowers to dehydrate.) Most flowers will last longer under cool conditions.

For loose bunches or boxed flowers:

–  Keep your flowers in a cool place until you can get them in a flower food solution. Don’t forget how important it is to follow the mixing directions on the flower food packet.
–  Fill a clean (washed with a detergent or antibacterial cleaning solution), deep vase with water and add a flower food from your florist.
–  Remove leaves that will be below the waterline. Leaves in water will promote bacterial microbial growth that may limit water uptake by the flower.
–  Re-cut stems by removing one to two inches with a sharp knife. Place the flowers in the vase solution you’ve prepared.

If you purchase loose flowers for your own arrangements you should also consider these tips:

–  When selecting flowers, look for flowers with upright, firm petals and buds beginning to open. –  Yellow, spotted or drooping leaves are signs of age.
–  When using woody stems and branches (such as quince, forsythia or lilac), cut the stem with sharp pruning shears. Place them in warm water containing fresh flower food to promote flower opening.

Plant Care Tips: Green Thumb Not Required

Not only are green and flowering plants a great enhancement to any home or office decor, they are also beneficial to your health. The results of a study by the National Aeronautics and Space Administration (NASA) show that common houseplants are powerful, natural air cleaners – all the more reason why you want to keep your plants healthy with the proper care.

Most plants come with care instructions specified for the type of plant. The Society of American Florists provides these additional general guidelines to keep most green houseplants thriving:

Keep plants in medium-light locations – out of direct sunlight

Natural light is best, but some plants can also thrive in office fluorescent light. Most flowering potted plants should be placed in areas with the most light in order to maintain good flower color and promote the maximum number of flowers to open. Foliage plants will do well under lower light levels and can be placed in areas providing reduced light.

Plant soil should be kept moist at all times

Plants should not be allowed to dry out or wilt. Be careful to avoid overwatering – do not allow plants to stand in water. Avoid wetting plant leaves.

Avoid excessive heat or cold

Plants should be kept in a cool spot (between 65 to 72 degrees Fahrenheit) for best performance. They should be kept away from direct sunlight, heating or cooling vents, directly under ceiling fans, or on top of televisions or radiators. (Appliances like televisions give off heat, which causes plants to dehydrate.)

All 11 arrangements can be viewed at www.DrDelphinium.com.
